Stress relief breakfast bagel
Ingredients:
1 bagel
3 Tablespoons vegan eggs (Just egg)
Vegan cheese slices
1 portobello mushroom head
1/4 avocado
1 1/2 Tablespoons vegan ranch
1 Tablespoon sriracha or chili sauce (optional)
1 teaspoon reishi mushroom powder
seasonings of choice

1) Cut Bagel in half and toast bagel
2) Remove gills and stem from Portobello. Clean Portobello.
3) Oil a medium sized pan. Once heated, place mushroom in pan. Let cook for 2 minutes, flip and season using seasonings of choice (adding reishi mushroom powder on portobello is optional).
4) Vegan ranch, chilli sauce or sriracha (optional), and reishi mushroom powder in small mixing bowl and stir until well combined.
5) Add Cheese slice on top of portobello and put lid on pan for about 1 minute or until cheese is slightly melted.
4) Add JustEgg to a well oiled sauce pan. Add seasonings of choice and cook until well done.
5) Assemble sandwich by first placing sauce on bagel slices, adding portobello, Just Egg and avocado slices.
6) Cut sandwich in half and enjoy!
